Humboldt Fog(more) »rank: 9922from: Gourmet Food StoreOur review: :We're excited to add this lovely cheese to our collection. Made right here in the USA, Humboldt Fog gets it's name for the rolling fog that emerges from the ocean in California's Humboldt county. This poetically-inclined cheese is creamy and smooth, with a bloomy rind (edible) and a tangy flavor that pairs well with fruits for dessert or on a cheese plate. A disctinctive layer of ash divides the cheese in half, much like Morbier. Made from the milk of only a handful of selected local dairies. Serve with honeycomb, pears and a crisp white wine, or a salad with mandarin oranges ... Detail |

Mahon Cow's Milk Cheese, D.O. by latienda.com(more) »rank: 11698from: QueamaOur review: :Mahón is a traditional semi-hard cheese, produced from cow's milk on Minorca, the outermost of the three Balearic Islands. The city of Mahón is the major town on this small agricultural island. Traditionally, to produce Mahón cheese, the curd is placed in the center of a cloth. The corners of the cloth are then knotted and twisted together, which gives the cheese its typical 'cushion' shape. It then matures in the cloth for several days. The flavor is smooth, yet buttery sharp, slightly salty with a marvelous creamy, nutty aroma. Our Mahón cheese is young, when the texture is smooth and supple ... Detail |

Bianco Sottobosco (8 ounce) by igourmet.com(more) »rank: 10247from: igourmetOur review: :Bianco Sottobosco is a very special cheese. Handmade in Cuneo in the Piedmont from a blend of cow and goat's milk, Bianco Sottobosco also incorporates cuts of authentic black truffle found in Alba. It has a slightly dry texture and a fresh, earthy flavor. Aged for six weeks in a dedicated mountain cave whose walls are made of Tufo (porous rock), this cheese has to be tasted to fully understand its splendor. Excellent served before the meal with a glass of Barolo, this rare cheese is completely unknown outside its native area and will certainly impress even the most jaded cheese snob ... Detail |

Castelmagno (8 ounce) by igourmet.com(more) »rank: 11612from: igourmetOur review: :Refered to as the most important Piedmontese cheese, Castelmagno takes its name from the town of Castelmagno, where it has been produced since ancient times. Castelmagno is made of pasteurized, partially-skimmed cow's milk blended with a small amount of sheep's and goat's milk. It has a peculiar flavor that derives from a particular kind of grass (called 'evax') that is native to the pastures of Cuneo, the sole province of its production. Castelmagno has a hard, brown rind cloaking a medium-hard interior of pearly white colour. Often times, edible blue-green veins can be found in the cheese, giving those sections a sharper ... Detail |
