British Isles Blues Assortment (2 pound) by igourmet.com

(more) »rank: 5468

from: igourmet

Our review: :Those Brits, long enamored with blue cheeses, have inspired us to create this special blue cheese assortment. To round out the pack, we've included one of our favorite Irish blues, the inimitable Cashel Blue. This assortment of blue cheeses showcases how varied the texture and sharpness can be. It includes:Shropshire Blue: Made in a similar way to Stilton, it is a soft cheese with a sharp, strong flavor that takes between six to eight weeks to mature. Orange in color with blue veining, it enjoys a slightly tangy aroma. (8 oz.)Royal Windsor: Combines three flavorful elements into a strikingly unique creation: cheddar, ...

Roquefort Papillon Organic (8 ounce) by igourmet.com

(more) »rank: 5471

from: igourmet

Our review: :Even though it is made from certified organic milk, this selection is authentic French Roquefort. The sheep that produce the milk for this cheese are given no antibiotics, no hormones, and no growth factors. They graze on fields that have not been treated with chemical fertilizers, pesticides or herbicides for a minimum of three years. The result is a noble, all natural blue cheese. Papillon wraps their organic Roquefort in white foil to distinguish it from their non-organic Roquefort, which comes in black foil.

Roquefort Societe Bee (8 ounce) by igourmet.com

from: igourmet

Our review: :With Roquefort's fine, milky-white body veined with emerald green, and its well-balanced flavor, this cheese has been appreciated for generations. The secret of Roquefort's manufacture lies in the cellars built in the 17th century. Thanks to the fleurines that allow the air to circulate in the cellars, Société's master cheese-makers are able to maintain the relative humidity near to saturation point. These are the ideal conditions for the development of the subtle and unequalled flavor of Roquefort Société.In accordance with the AOC Roquefort regulations, the production of Roquefort requires whole, raw sheep's milk. In order to be used in Roquefort production, this ...

Cabra Transmontano (8 ounce) by igourmet.com

(more) »rank: 5528

from: igourmet

Our review: :From the north-west part of Portugal comes a goat's cheese made exclusively from the Serrana Negra goat breed. The Serrana is generally eaten for its meat in Portugal, but for 40 - 50 days in the early spring the goats are milked. The milk is very rich in butterfat and protein. Sensitive to the cold, but hardy to extreme heat, the goats move around the mountains from high to low altitudes, transhumance, as the weather changes. The Tras-os-Montes region is best known to outsiders as where Portugal's grapes for port are grown (at the lower altitudes), to insiders it is also known ...

Manchego - Aged 6 Months

(more) »rank: 75442

from: Gourmet Food Store

Our review: :An older Manchego gets heartier and more flavorful as it ages. From El Trigal, Spain, this sheep's milk cheese has a more developed flavor and firmer texture than younger Machengo cheeses. A good blend of salty and nutty flavors, and sweet hints and buttery taste. Excellent to give a tapas or antipasto platter more dimension. Pair with a blanc de noir champagne.
